Tasty Tuesday: Balsamic Glazed Caprese Chicken

This meal started out as a complete experiment.
I was originally going to do almost the same thing to french bread and have it as a side to a pasta dish but decided instead to try it out on chicken as the main dish, and the result was dreamy!
I'm obsessed with how this tasted.
The ooey gooey mozzarella and the warm tomatoes mixed with a tangy yet sweet balsamic glaze was the perfect combination for this chicken!
Not only did it taste great, but it was SO easy! Not much cooking experience is needed!
I'm positive this dish will be on our weekly menu more often than not! :)



Ingredients:
-As much chicken as you want. We used 7 tenders and literally ate all of it! If you're using chicken breasts they cook much faster if you slice them in half to make them thinner. 
-1 block fresh mozzarella cheese
-About three Roma tomatoes. More or less depending on how much chicken you use and how thick you make the slices.
-Dried Basil
-Salt and Pepper
-4 Tbsp. Balsamic Vinegar
-2 tbsp Dijon Mustard
-1 tsp white sugar
-1 tsp brown sugar
-2 tbsp olive oil

Directions
1) Pre-heat oven to 400 degrees 
2) Defrost your chicken. Once defrosted, use a meat tenderizer to flatten a bit. 
3) Make your sauce. Combine olive oil, balsamic vinegar, tbsp dijon mustard, white sugar, and brown sugar.
4) Lightly spray an 8x10 baking dish with cooking spray then add your chicken.
5) Layer the mozzarella and tomato on top of chicken. Drizzle sauce evenly over chicken and throughout baking dish. Top with dried basil.
6) Bake for about 20 minutes or until cheese begins to melt. Once the cheese is melted turn your oven on broil for a minute or two until cheese becomes bubbly and golden brown. I always cut one piece of chicken open to make sure it is cooked through.
